Even as a child, I couldn’t resist peeking into their kitchens. While other kids were busy playing outside, I was the one standing near the stove, watching every small detail—how they measured the spices, the way they marinated the meat, and the patience with which they layered the rice for dum.
It was during my 7th class that I first learned how authentic Hyderabadi Dum Biryani masala is really made. How to Cook Hyderabadi -Style Chicken/Mutton Dum Biryani with Our Cracked Masala
For 1 kg Chicken or Mutton:
- Add 1.5 to 2 tablespoons of Hyderabadi  Dum Biryani Masala to your marination.
- Along with the masala, add 4 cardamoms, 4 cloves, and 1-inch cinnamon stick.
👉 If you are using separate cardamom powder, reduce the masala by half a tablespoon. Otherwise, no adjustment is needed.
